I have been meaning to tell you about these tacos for several weeks, but life has been a bit hectic. I recently quit my job and have been pretty ambitious in efforts to find my place in this little world. More about that later, back to those tacos…
At the end of March we had an amazing sunny 70 degree day during this neverending winter. If my memory serves me correctly, we also had a snowstorm shortly after in true Minnesota fashion. So what do you do on an amazing day?
Bust out the grill!
I will admit I am a reluctant griller. We were given a used Weber gas grill when we moved into our house. It works well but we don’t use it as much as we should. I am more comfortable in the kitchen with my pans and full arsenal of tools where I can have several things going and whipping things up on the fly. I do love grilling up the fresh bounty from the farmers market but can’t seem to move past the simple grilled meat, grilled side vegetable meal. Maybe this is the year all that changes, I have some time.
Since it is essential to be outside for as long as possible on these warm days, grilling was a no-brainer. Steak tacos to be exact. I marinated grass-fed flank steak in a dish with habanero infused vinegar, fresh cilantro, salt, and pepper for 2 hours. Threw it on a hot grill and cooked to a medium temp.
Rich was on fixings duty: quick pickled white onions with oregano, cabbage salad with lime juice and tomatoes, sides of limes, avocado, tomatoes, and cilantro. The colors and flavors were so fresh and vibrant!
I had a lot of fun with this meal and vow to grill more this summer. I have a small charcoal grill too, which I plan to master. Do you have any favorite recipes for the grill?
